Background of the Study

Foodborne diseases are a major public health issue worldwide, particularly in developing countries like Nigeria. In Bauchi State, the prevalence of foodborne diseases has been increasing, with improper food handling practices being identified as a key contributing factor. Poor food handling, such as improper cooking, insufficient handwashing, improper storage of food, and contamination from environmental factors, plays a significant role in the spread of foodborne illnesses like cholera, typhoid fever, and salmonella (Ali & Mohammed, 2023). In Bauchi State, where food handling standards are often overlooked due to limited resources, the risk of foodborne diseases is particularly high. This study seeks to examine how poor food handling practices contribute to the prevalence of foodborne diseases in the region.

Statement of the Problem

Foodborne diseases continue to be a significant health burden in Bauchi State, with poor food handling practices identified as a key factor in the increasing number of cases. These practices, often linked to a lack of awareness and inadequate facilities, are prevalent in both the formal and informal food sectors. There is limited research on the direct link between food handling practices and the prevalence of foodborne diseases in the state, making it essential to examine this relationship to inform public health strategies.

Objectives of the Study

  1. To assess the food handling practices among food handlers in Bauchi State.
  2. To evaluate the relationship between poor food handling practices and the prevalence of foodborne diseases in Bauchi State.
  3. To recommend measures for improving food handling practices and reducing foodborne diseases in Bauchi State.

Research Questions

  1. What are the common food handling practices among food handlers in Bauchi State?
  2. How do poor food handling practices contribute to the prevalence of foodborne diseases in Bauchi State?
  3. What interventions can be implemented to improve food handling practices and reduce foodborne diseases in Bauchi State?

Research Hypotheses

  1. Poor food handling practices significantly increase the prevalence of foodborne diseases in Bauchi State.
  2. Food handlers in Bauchi State have inadequate knowledge and training on proper food handling practices.
  3. Implementing food safety education programs will lead to a reduction in the prevalence of foodborne diseases in Bauchi State.

Scope and Limitations of the Study

The study will focus on food handlers in Bauchi State, including those in both urban and rural areas. It will assess food handling practices and their correlation with foodborne diseases. Limitations include the potential for underreporting of foodborne illnesses and the challenge of controlling for all factors influencing disease prevalence.

  • Food Handling Practices: Procedures for the preparation, storage, and distribution of food that minimize the risk of contamination.
  • Foodborne Diseases: Illnesses caused by the ingestion of food contaminated with pathogenic microorganisms, toxins, or chemicals.
  • Food Handlers: Individuals responsible for the handling, preparation, and serving of food to consumers.
